‘Hida Beef (Hida gyu) is the specific name given to beef from black-haired Japanese cattle that have been raised in Gifu Prefecture for at least 14 months. Hida Beef must be confirmed and certified as Yield Score of Grade A or B by the Hida Beef Brand Promotion Conference, and have a Firmness and Texture Grade of 5, 4 or 3, as per the Japan Meat Grading Association’s grading system’

I opted to come here for lunch as the price is much lower. Lunch set includes 120 grams of meat, vegetables, miso soup, pickles, bowl of rice, cold drink and a scoop of ice cream. Before coming to Takayama I knew nothing about Hida beef, I thought there was only one type of Wagyu which is Kobe beef. Little did I know Hida beef will become my favourite type of Wagyu and opened the world to wagyu in the future.
There are three lunch sets to choose from and they are all very similar except the shape of the meat. We chose the beef cubes and the beef pieces, the third option which we did not choose was the beef slices. There is a bell on each table, everytime you need service you just need to press the bell to alert the staffs. This is a DIY restaurant, so you must grill own meat and vegetables to your own preferences.

I personally prefer the Hida beef cube and would highly recommend it, as it is a cube you will need to grill all 6 sides and keeping the centre pink. The marbling quality of the meat is what actually makes the the melt in your mouth factor. Both types of the meat is beautifully marbled and it definitely melts in my mouth, although I did find the cube more creamy and rich. Adding sea salt or the special meat sauce is recommended after grilling the meat, I actually prefer just adding a little salt which really brings out the richness of the Wagyu. If you dip it into the special meat sauce, all you can taste is the sauce.

One of my best and memorable meals on this Japan trip. I went back twice to have Hida beef on this trip, it was simply divine. The meat is top notched and a very reasonable price, even the lunch set fills me up completely. However as it was so heavenly, we couldn’t help ourselves but order a plate of A5 Wagyu on its own and came out as happy as ever. Not only was the meat delicious, the sides were all beautifully presented and cooked. I highly recommend trying Hida beef here at Maruaki, you can never go back to normal beef and you won’t ever see Kobe beef the same!
